Puerco con Papas: Pork with Potatoes
We don’t waste leftovers, but I must admit that we don’t always enjoy eating them! This recipe is one I like to reach for when trying to stretch a small amount of meat for a complete meal. The best part is that the cooking method can make even dry, leftover chicken, pork, or beef taste great! This filling meal will leave your family happy and satisfied. They won’t even know they’re eating leftovers!
Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients:
· 1-2 cups of leftover meat (pork, chicken, or beef) cut into bite-sized pieces
· 2 potatoes
· 1 onion
· 2 garlic cloves
· 2 large tomatoes
· 2 serrano chiles (or jalapeno)
· 1 teaspoon of salt (plus a pinch as needed)
· 2 tablespoons of cooking oil
· Optional garnish: cilantro, avocado, or sour cream
· Optional sides: tortillas or tostadas
Spice Alert: This is a moderately spicy dish. Feel free to make this meal comfortable for your home by substituting the type and/or amount of chiles.
Directions:
1. Toast tomatoes, garlic, and chiles until blackened and tomatoes are soft. You can place them in a dry pan (no oil) on high heat, or on a sheet pan under the broiler in the oven.
2. If you don’t feel like toasting, you can just blanche the tomatoes and chiles in a pot of boiling water on the stove or skip and go directly to the next step!
3. Add tomatoes, chiles, and garlic to a blender with about 1 teaspoon of salt. Blend until smooth and set aside.
4. Chop potatoes and onions into bite sized pieces and sprinkle with salt.
5. In a skillet set to a medium heat, add 2 tablespoons of oil, and cook potatoes and onions for a few minutes until starting to brown (about 5 minutes).
Pro Tip: This is a great meal to cook with leftover bacon grease!
6. Add meat and salsa to the skillet and stir to incorporate.
7. Cook on low with a lid for about 15 minutes or until potatoes are cooked through.
8. Do one last taste test to determine if more salt is needed.
9. Serve with tortillas or tostadas and enjoy!
