Authentic Huevos Rancheros

Huevos Rancheros is a popular weekend brunch meal at our home. Full of nutrition and flavor, this wholesome meal will leave your family satisfied! This plate consists of eggs, beans, and salsa, and can be served with tortillas or tostadas.


Prep Time: 5 minutes

Cook Time: 15 minutes


Ingredients:

Salsa

· 1 medium onion

· 2 medium tomatoes

· 2 serrano chiles (substitute for jalapenos or chile of your choice!)

· Salt to taste

Beans

· Cooked Beans (your choice: pinto, black, romano, etc.)

· Tablespoon of diced onion and/or garlic

· Queso Fresco (optional)

Eggs

Cooking Oil

Tortillas, Chips, or Tostadas (chef's choice!)


Directions:


1. Prepare salsa by dicing onion, tomatoes, and chiles. Warning: Serranos are spicy! if

you aren’t familiar with serrano chiles, consider starting with just one, or even half a chile and/or deseeding. You can also substitute for the chile of your choice!


2. Add a tablespoon of cooking oil to a pan and cook the vegetables on a medium heat for about 5 minutes until the onions and chiles are soft and the tomatoes have broke down.


3. Salt to taste and set aside when cooked.

Next we will prepare the refried beans:


4. If you are using beans from a can, drain the beans and save the liquid to thin out the beans later.


5. Add about 2 tablespoons of cooking oil to a pan (non-stick is best).


6. Sauté a small amount of finely dice onion and/or garlic until fragrant (use a low heat to prevent burning) this will only take 1-2 minutes. A tablespoon of each is plenty, but you can adapt to your liking or omit entirely!


7. Add cooked beans and start mashing! I just use a wood spoon, but you can use a potato masher or other kitchen gadget for this step.


Pro Tip: Give the beans a few minutes to heat through before mashing, they break down easier when warm.


Cheat: Not interested in the arm work out? Put beans in a blender or food processer and blend to your desired texture, add liquid to thin out as needed, and then add to the pan for frying!


8. As you are mashing the beans, slowly add the liquid from the beans to thin out the beans to your liking. You can also use water or broth to thin out the beans.


9. Prepare eggs however you prefer, we like over medium.


10. Serve with tortillas, tostadas, or chips and enjoy!
